400 g chicken breast

100 g button mushrooms

25 g of galanga (kind of ginger)

25 g shallot

1 l coconut milk

3 lemongrass sticks cut into pieces

5 bergamot leaves

6 cl lime juice

4 cl of fish

2 small chilli peppers very finely chopped

10 g sugar

10 g salt

Step 1
Cook the chicken breasts in boiling water for 12 minutes. Cut them into small pieces.
Step 2
Cut the mushrooms into large strips.
Step 3
Cut the galanga into 2 cm pieces.
Step 4
Mince the shallots.
Step 5: Mince the shallots.
Pour the coconut milk into a saucepan, add the lemongrass, galanga, shallot, and bergamot leaves.
Step 6
Bring to a boil, then reduce to medium heat.
Step 7
Add chicken, mushrooms, salt, lemon juice, fish sauce, chilli pepper and sugar.
