Four Cheese Pie

Number of people

80 g Roquefort cheese

80 g of munster

80 g goat cheese

60 g grated Beaufort cheese

300 g shortcrust pastry

10 g butter

3 eggs

300 g liquid cream

1 tablespoon pink berries

1/2 tablespoon cumin in granules

1 level tablespoon chopped parsley

1 teaspoon mustard

Grated nutmeg

Pepper from the mill


Preparation: 30 min
Cooking time: 50 min
Step 1
Heat the Th 7 oven (210°C). Top a buttered pie pan with dough.
Step 2
Cut four strips of dough from the dough scraps the length of the mould radius. Place them crosswise on the bottom of the moistened dough, pinching them in the centre to weld them together.
Step 3
Cover each compartment with a piece of parchment paper and garnish them with dry beans to keep them in shape during cooking. Slide into the oven, cook for 20 minutes.
Step 4
Crumble the Roquefort and dice the Munster and goat into small cubes. Break the eggs into a bowl, add the cream, grated nutmeg, salt, pepper and mix.
Step 5
Remove the pie shell from the oven, remove the beans and paper. Garnish each compartment with a kind of cheese. Sprinkle Roquefort with parsley, goat cheese with crushed pink berries, Munster with cumin, then flavour Beaufort with mustard and ground pepper.
Step 6
Gently pour the egg and cream mixture over the cheeses. Slide into the oven, then bake for 25 to 30 minutes, until the pie is nicely browned.
Step 7
Enjoy hot, accompanied by a garlic curly salad seasoned with a classic cider vinegar vinaigrette.
