1 kg of pork shank

1 ripe fresh pineapple

1 lime

1 piece of fresh ginger

2 tablespoons of liquid honey

Cider vinegar

Soy sauce

8 cloves of garlic

8 medium onions

1 tablespoon coriander grains

fresh basil leaf

Cooking time: 45 min
Step 1
- Chop 2 cm of ginger, put in a bowl with a teaspoon of cider vinegar, 2 tablespoons of honey, 2 tablespoons of soy sauce and the pineapple juice.
Step 2
- Cut the meat and pineapple into pieces, chop the garlic and onions.
Step 3
- Fry the garlic and onions in a little oil, then add the pork, pineapple and lime juice.
Step 4
- Stir until the meat is golden brown and then add the contents of the bowl.
Step 5
- Leave to cook over low heat for about 35 minutes. At the end of cooking, sprinkle with crushed coriander seeds, mint and basil. Serve immediately with basmati rice.
