2 salmon fillets (approx. 150 g)

2 sheets of Swiss chard

1 bunch of flat-leaf parsley

1 clove of garlic

1 lemon

1 orange

Pepper

Salt





Preparation

Preparation time: 20 min
Cooking time: 5 min
Step 1
Rinse the chard ribs and separate the white from the green. Blanch the leaves for 1 minute in boiling water.
Step 2
Remove them with a skimmer and drain them flat on a kitchen towel.
Step 3
Remove the leaves from the parsley, peel and coarsely chop the clove of garlic, remove the zest from the lemon and half of the orange. Combine these ingredients and chop finely.
Step 4
Season the salmon fillets with salt and pepper. Place them on the chard ribs. Cover them with the parsley-garlic-lemon-orange mixture and close the papillotes.
Step 5
They should look like rectangles.
Step Six
Steam the papillotes for 3 minutes (the salmon should be half cooked). Serve with steamed potatoes drizzled with olive oil.
