Soft tomato pie

Soft tomato pie

Number of people

1 shortcrust pastry

5 tomatoes

4 slices of quality white ham, very thin

2 scoops of mozzarella

100 g grated beaufort (cheese)

1 tablespoon mustard

3 pinches of Provence herbs

Preparation: 10 min
Cooking time: 25 min
Step 1
Preheat your oven to 180°C (thermosta 6).
Step 2
Garnish a tart pan with the dough, and place in a cool place while preparing the filling.
Step 3
Cut the tomatoes into slices, sprinkle with salt and let them drain in a colander.
Step 4
Tear off the slices of ham, and slice the mozzarella into thick strips.
Step 5
Brush the shortcrust pastry with the mustard on a regular basis, place the mozzarella slices, then the ham slices and finally the tomatoes.
Step 6
Sprinkle generously with herbes de provence, and grated Beaufort cheese.
Step 7
Bake for about 25 minutes... and enjoy!
Author's note
This pie does not give off water at all, and the cheese gives the vegetables all their softness. To be served with a small green salad for a complete meal.
