Ingredients

500 g fresh gizzards
1 bunch of chard
2 tomatoes cut into thin half-rings, seeded
2 onions, half-rounded
2 cubes of gold kub
Parsley or basil
Pepper (no salt)
Oil
Preparation
TOTAL TIME: 4 H
Preparation: 1 h
Cooking time: 3 hours
Step 1
Boil the gizzards in salted water over low heat for 2 hours.
Step 2
Add water as needed. Some water should remain after cooking.
Step 3
Drain the gizzards and keep the remaining cooking juices.
Step 4
Wash and cut the chard into squares. Steam them (stop cooking when they are still slightly crunchy).
Step 5
Fry the gizzards, onions and tomatoes in oil over low heat until the onions are cooked.
Step 6
Season and add the chard. Sauté for 5 min.
Step 7
Add the remaining cooking juice. Cook for 10 min.
Step 8
Check the seasoning.
Step 9
Serve with rice or pasta.
Author's note
This dish can be made with chicken thighs instead of gizzards.
