2 cooked beets

1/2 cucumber

1 plain yoghurt

10 cl liquid cream

1 small bunch of mint

1 shallot

3 tablespoons of olive oil

1 pinch of balsamic vinegar

Pepper

Salt



Preparation

Preparation: 10 min
Step 1
Cut the beets, half cucumber and shallot into coarse pieces and place them in the bowl of an electric blender.
Step 2
Add the yoghurt, cream, oil and balsamic vinegar, as well as the bunch of mint.
Step 3
Salt and pepper.
Step Four
Blend at full speed until smooth and thick.
Step 5
Leave to cool for a few hours in the refrigerator. Serve very chilled.
Author's note
A very fresh and sweet summer starter. Be careful not to overuse the vinegar, the soup would be too acidic.
