1 ball of beetroot (about 250 g)

2 tablespoons low-fat mayonnaise

1 clove of garlic

1 teaspoon chopped parsley

1 teaspoon vinegar

Step 1
Mix the beetroot and garlic.
Step 2
Add mayonnaise, vinegar and parsley and mix well.

Serve on toasted bread, with a green salad, or as an aperitif.
