300 g beetroot

40 cl liquid crème fraîche

2 tablespoons hazelnut oil

2 tablespoons balsamic vinegar

sprig of chives

Step 1
Dice the beets, then mix them with 30 cl of cream and the oil and vinegar.
Step 2
Keep cool.

Whip the remaining cream into a whipped cream and gently fold it into the mixture.

Keep a little whipped cream for the final decoration.
Step 5
Put the preparation in verrines with a teaspoon of whipped cream on top and a few sprigs of chives.
