3 cooked red beets

250 g semi-fresh goat's cheese

150 g of mesclun or other salad

3 tablespoons walnut oil

1 tablespoon balsamic vinegar

Pepper

Salt

Walnut kernel




Preparation
TOTAL TIME: 15 MIN
Preparation time: 15 min
Step 1
Cut the beets into slices of about 5 mm and spread them out on absorbent paper.
Step 2
Line a cake tin (not too large) with cling film and alternate 1 layer of beets and 1 of cheese slices.
Step 3
Season with salt and pepper between layers and drizzle with oil until all ingredients are used up.
Step 4
Fold down the film, place a weight on the terrine and leave in a cool place for about 12 hours.
Step 5
Cut the terrine into slices and serve with the mesclun seasoned with the remaining oil, vinegar and walnuts.
