Roasted Chicken Crazy Salad

Number of persons

1 cooked beetroot

1 zucchini

1 carrot

1 bunch of radishes

3 ripe grape tomatoes

1 small bag of mixed salad

6 roast chicken breasts

6 button mushrooms

12 snow peas

Preparation: 30 min
Step 1
Steam the snow peas.
Stage 2
Place a handful of salad on each plate.
Step 3
Sprinkle with diced raw carrots and courgettes. Arrange a few tomato wedges all around.
Step 4
Add pieces of mushrooms, radishes cut in 4 lengthways, snow peas cut in half and chicken strips. Cut the beetroot into very thin slices using a mandolin or a sharp knife and arrange around the salad.
Step 5
If the plates are square, decorate one corner with a quarter of a tomato, another with a nice beet disc, arrange the snow peas elegantly across the 3rd corner.
Step 6
For round plates, proceed in the same way by decorating the edges of the salad.
Step 7
Keep cool.
Step 8
Finally, make a vinaigrette and season just before serving.
