Whole Celery Salad

1 celery heart
200 g celeriac
100 g mushroom
2 slices of cooked ham
2 potatoes
1 red beetroot
For the little vinaigrette:
1 tablespoon of vinegar
1 teaspoon of mustard
1 egg yolk
3 tablespoons of oil
Chopped herbs (the ones you like)
Pepper
Salt

Step 1
Cook the potatoes and beetroot. Meanwhile, cut the celery heart into pieces. Grate the celeriac.
Step 2
In a bowl, combine vinegar, mustard, egg yolk and oil. Season, add the celery and let macerate for 1 hour.
Step 3
Cut the ham into sticks, slice the mushrooms, dice the beetroot and slice the potatoes.
Step 4
Mix the celery, ham and mushrooms in a bowl and arrange the beet and potato pieces all around. Finally, sprinkle with chopped herbs.
Author's note
You can arrange the vegetables together as you like, jumbled or in a rosette, it's just a matter of harmonising the shapes and colours on your plate! You can also add 2 endives in the salad.
