Number of persons

Raw beets (2 or 3, depending on size)

1.5 l salt water

1 teaspoon of sugar


Bouquet garni


Cumin (according to your taste)

Beef stock (1 cube)

Total Time: 20 min
Preparation: 10 min
Cooking time: 10 min
Brush the beets under running water, peel them, slice them and put them in an earthen pot.
Pour in boiling water, add spices and leave to ferment for 3 days.
Strain the liquid, add it to the meat stock and cook for 10 minutes. Add a few drops of lemon to keep the colour.
Serve hot, accompanied by ravioli or pierozkis.
