2 raw red beets

1/2 teaspoon citric acid

Fresh cream

Cooking time: 1 h
Peel the raw beets and cut them into slices about 4 mm thick.
Cook the beets in 1 and a half litres of salted water.
When they are cooked, add the citric acid (taste, to judge the acidity), add the fresh cream.
And pass the soup through a sieve.
This soup, at my place, is served in glasses that don't fear the heat, with boiled potatoes, and onions that have been sliced into rings and pan-fried in neutral oil (no olive oil).
