400 g vacuum-packed cooked red beetroot
1 onion
75 cl water or broth)
Pepper
Salt
Parsley
2 servings of Laughing Cow® "
50 g of bacon

Cooking time: 20 min
Fry the onion in a little fat, without letting it brown; then add the coarsely chopped beets.
Moisten with water or stock.
Add the seasoning (beware of salt, if you use stock and if you serve with bacon, it is better to adjust just before serving).
Cover and cook for 15 to 20 min (8 min in a pressure cooker).
In the meantime, grill the bacon and drain it.
When the soup is cooked, add the melted cheese and blend.
Serve the soup with the bacon in it.
