400 g cooked beetroot

3 sweet and sour apples

1 lemon

1 sweet or red onion

2 hard-boiled eggs

100 g walnut kernel

3 tablespoons of oil

1 tablespoon cider vinegar

2 tablespoons chopped chives

Cook the hard-boiled eggs. Peel and finely dice the beets. Slice the peeled apples into slices and add lemon juice as you go along so that they do not turn black. Mince the onion into thin slices.
Mix apples, beets and onions in the serving dish.
Make a vinaigrette: emulsify the oil with the vinegar, chives, salt and pepper. Drizzle over the raw vegetables.
For decoration: peel the hard-boiled eggs, cut them into quarters and garnish the salad with them. To finish, sprinkle with walnut kernels.
