4 vacuum-cooked beets

3 juice oranges

2 tablespoons of olive oil

1 tablespoon balsamic vinegar

1 tablespoon orange blossom

Pepper from the mill

Peel 2 of the oranges, making sure to reserve their juice in a bowl and remove the membrane from the quarters. Set aside.
Cut the beets into thin slices or cubes in a bowl, add the orange segments.
Prepare the vinaigrette: dissolve the salt, pepper and cumin in the vinegar and juice of the third orange. Add the olive oil and orange blossom water, whisking lightly to form an emulsion.
Once covered with this dressing, your salad can be sprinkled with fresh coriander.
