Thin pizza dough

500 g flour

1 sachet of express baker's yeast

1 teaspoon of salt

1/4 l lukewarm water

1 teaspoon of sugar

Cooking time: 10 min
Pour the flour into a large bowl and make a well.
Pour the yeast, salt and sugar into a measuring glass. Add 1/4 litre of warm water and mix well. Cover with plastic wrap and let stand for about 10 minutes (until a thick brown foam appears on the surface).
Pour the mixture from the measuring glass into the bowl, mix by hand. When the dough is no longer sticky, knead for about 5 minutes by hand on a floured surface.
Drizzle with a little olive oil and knead again for about 5 minutes.
Leave to rest for at least 1 hour under a damp cloth in a warm place (next to a radiator, fireplace or stove in winter).
After resting, knead for a few moments and then divide the dough into three equal balls (it can be frozen).
Spread the dough on a floured surface. Brush the plate with a little olive oil before applying the dough.
Bake for 10 minutes at 220°C (thermostat 7-8).
