For the beet cream:
1 beetroot

For the avocado mousse:
1 ripe avocado
1/2 lemon
1 pinch of cumin
1 pinch of salt
1 sprig of thyme
2 tablespoons of olive oil
15 cl liquid cream

Preparation of the beet cream :
Cut the beetroot into small cubes and put them in the blender (mixer), add the olive oil and spices and mix. Put your cream in your small verrines.
Preparation of the avocado mousse:
First of all, cut your avocado into small pieces.
(peel the skin) and blend them until they are pureed. Add the spices and olive oil and blend again. Finally add the liquid cream and mix thoroughly for 5 minutes.
Put your mousse on top of the cream layer.
Tip to make your verrine even more presentable: put your avocado mousse in a piping bag and decorate your verrine with a touch of basil on top.
