Number of persons

250 g flour

160 g sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1 good pinch of salt

2 medium ripe bananas (the riper the better)

85 g butter

2 tablespoons of milk

2 eggs

Preparation: 30 min
Cooking time: 1 h

Preheat the oven to 165° C (thermostat 5-6).
Mix 150 g of the flour with the sugar, baking powder, baking soda and salt.
Add the crushed bananas, butter and milk.
Beat (preferably with a mixer) gently until smooth, then vigorously 2 min.
Add the eggs and the remaining flour,
and mix well.
Grease the bottom of a cake pan and pour the batter into it.
Bake in the oven at 165°C for 55 to 60 min (check the baking time).
Can be glazed with a fromage blanc or crème fraîche glaze.
