Number of persons
For the dough:

1 egg + 1 egg yolk

100 g sugar

1 pinch of salt

125 g soft butter

200 g flour
For the cream:

1/4 l milk

Vanilla (extract or 2 split beans) or vanilla sugar (1 bag)

2 egg yolks

50 g sugar

30 g flour

1 tablespoon rum
For decoration :

1 beaten egg

Preparation time: 15 min
Cooking time: 40 min
Dough (to be made the day before): beat together the egg, egg yolk, sugar and salt. When the mixture has turned white, gradually incorporate the soft butter. Add the flour, then finish working the dough by hand.
Cream: boil the milk with the vanilla or vanilla sugar.
Beat the 2 egg yolks and the sugar until the mixture turns white, then add the flour and rum. Gradually add the boiling milk (stirring). Pour back into the saucepan and allow to thicken over low heat.
Final phase: Butter a springform pan, then line the bottom and sides with 2/3 of the dough. Garnish with the cream (cold).
Spread the remaining dough, place it in cover on the cake (after having wet the edges).
Brush the surface with beaten egg, then cut it with a sharp knife.
Bake 40 min (thermostat 7/210°C).
