250 g penne rigate

500 g cooked beetroot

1 kg of tomato

1 clove of garlic

Cooking time: 20 min
Dice the beetroot.
Boil and peel the tomatoes and cut them into quarters.
Peel and mince the garlic.
In an oiled frying pan, sauté the garlic, add the tomatoes and reduce over low heat.
Add the beets and cook, stirring occasionally, until you get the consistency of a purée.
Meanwhile, cook the pasta al dente.
Mix the vegetable mixture with the pasta as soon as it is cooked and serve immediately.
