2 beets (cooked)
150 g lamb's lettuce
4 hard-boiled eggs
1 bag of plain croutons
1 shallot
1 spoonful of mustard

Make the vinaigrette in a large salad bowl with the minced shallot, 1 spoonful of mustard, oil and vinegar, salt and pepper.
Dice the beets. Rinse the lamb's lettuce. Peel the eggs. Then mix everything together.
Add the croutons just before serving and enjoy.
