1 beetroot cooked and peeled (approx. 250g)
2 plain yoghurts brewed Bulgarian style
25 cl liquid crème fraîche
Cumin powder
Espelette chilli powder
Salt

Cut the beetroot, previously cooked and peeled, into small cubes.
Pour them into the blender bowl, along with the 2 yoghurts.
Blend for a long time to obtain the smoothest preparation possible.
Add the liquid crème fraîche and blend again for a long time, using the blender.
When the preparation has become liquid enough to be drunk without difficulty, add the salt, half a teaspoon of cumin powder and a hint of Espelette chilli pepper.
Leave the preparation in the fridge and serve well chilled, with a few sprigs of chives for decoration.
