2 cooked beets

150 g spreadable cheese

2 fromage frais such as pélardons or cabécou (or failing that, fêta)

4 slices of cured ham

1 drizzle of olive oil

1 drizzle of balsamic vinegar

1 pinch of salt

1 pinch of pepper

Coarsely cube the beets. Put them in a blender.
Add the cheese spread. Add salt and pepper. A dash of balsamic vinegar. Two tablespoons of olive oil.
Blend everything finely. Taste and adjust the seasoning to your taste.
Then strain through a sieve to smooth the preparation.
Crumble the fresh goat's cheese into verrines.
Add 2 to 3 tablespoons of beetroot mousse on top.
Place dry ham shavings on top, trying to form "roses".
It's ready!
