4 eggs
180 g sugar
120 g flour
1 sachet of yeast
160 g melted butter
100 g of chocolate
100 g chocolate for the chips
40 cl full cream
Homemade candied cherries or cherries in brandy
Preparation

Mix eggs, sugar with a whisk on a water bath (not too hot).
Add sifted flour, baking powder and butter.
Add the melted chocolate (on a water bath at 30, 35°C).
Bake in two moulds (diameter 20 or 24) at 175°C for 30 minutes (conventional heat).
The shavings are made by spreading the melted chocolate in a thin layer on a marble slab. Choose the moment, neither too cold nor too hot to form them.
Cut the cooled cakes in half and soak them in the cherry juice with added kirsch.
Whip the whipped cream with 100g icing sugar.
Form the cake into a first layer of whipped cream with pieces of cherries, then a second layer of cherry juice reduction with sugar to make a not too hard caramel and the last layer of whipped cream with cherry pieces.
Coat the cake with whipped cream and arrange the chocolate shavings.
For a cake 28 cm in diameter multiply the proportions by 1.5.
