3 kg of blackberries

2 kg of special jam sugar (crystal sugar with pectin)

1 lemon

10 g butter (optional)

Cooking time: 25 min
Wash the blackberries thoroughly and drain them.
Put them in a large cooking basin with a glass and a half of water.
As soon as it starts to boil, remove from the heat and pass the fruit through the vegetable mill (the old one, the one with a crank handle!), with the finest grill you have.
When all the fruit has passed through, weigh the purée obtained and throw the grains retained in the mill.
Put the juice back into the basin rinsed with the crystal sugar (count 1 kg of sugar for 900 g of puree).
Stir to dilute the sugar before cooking again.
Count 5 minutes from the start of boiling, and stir constantly.
