250 g flour

125 g caster sugar

5 egg yolks

125 g butter

1 tablespoon of milk

lemon peel or vanilla powder

Dig a fountain in the sifted flour and pour in the sugar, 4 egg yolks and lemon zest.
Sand the mixture before adding the butter cut into small pieces and knead quickly to obtain a homogeneous dough.
Leave to rest in a cool place for at least 2 hours.
Flour the worktop and roll out the dough to a thickness of 3-4 mm.
Cut out various shapes with a cookie cutter.
Place them on a baking sheet covered with baking paper, then brown with egg mixed in milk.
Bake in a medium oven at 160°C, gas mark 5-6, for 6 to 8 minutes, depending on the oven: they should have turned a nice golden colour.
