300 g butternut

300 g carrot

300 g beetroot, cooked to perfection

1 lemon

4 tablespoons of olive oil

50 g pine nuts

1 clove of garlic

1 sprig of parsley

1 pinch of salt

1 pinch of pepper

Grate the vegetables without their skins in a food processor with the grater for grated carrots.
In a bowl, combine the lemon juice, olive oil, salt, pepper and crushed garlic.
Add the grated vegetables and mix. Set aside in a cool place for 2 hours.
In the meantime, fry the pine nuts under the grill.
Serve very fresh sprinkled with the toasted pine nuts and chopped parsley.
