400 g pizza dough or bread dough

250 g white ham

300 g fresh button mushrooms

1 shallot

200 g mozzarella cheese

12 pitted green olives

2 tablespoons tomato pulp

Grated Gruyère

1 tablespoon oregano

1 egg white

Cooking time: 25 min
Mince the button mushrooms and shallot, sauté in olive oil for 10 minutes.
Once it has returned to the pan, add the tomato pulp, salt and pepper and set aside.
Dice the mozzarella and ham, coarsely dice the olives.
Preheat the oven to 210°C (gas mark 7).
Divide the dough into 4, spread out into four discs of 16 cm diameter (approximately), using a brush brush brush them with olive oil.
Add the ham, mozzarella, olives and oregano to the mushroom mixture.
Place the mixture on each half of the discs, fold the other half to obtain turnovers, pinch the edges to weld well.
Sprinkle a non-stick baking sheet with flour, place the calzone pizzas on top, then brush them with egg white.
Sprinkle with grated gruyère cheese.
Bake for 25 min, the dough should swell and be golden brown.
