Number of small cabbages

1/4 l water

1/2 teaspoon salt

1 tablespoon powdered sugar

80 g butter

125 g flour

4 eggs (the volume of eggs must be equal to the volume of water)

Large crystal sugar (or casson)

Cooking time: 30 min

Heat the water with the salt, powdered sugar and butter in a saucepan. When the butter has melted, pour in the flour all at once and stir vigorously with a wooden spoon over low heat until the dough comes away from the sides of the pan.
Remove from the heat, add an egg and stir until it is completely absorbed by the dough. Proceed in the same way for the other three eggs. Preheat your oven to 200°C.
Place teaspoons of the dough on a baking tray or a baking sheet covered with baking paper at intervals of two to three centimetres, then place a few sugar crystals on top of each one.
Place in the oven at half height for 15 minutes, then lower the thermostat to 175°C and leave to cook for a further 15 minutes (this is essential to dry the puffs and prevent them from softening when they come out of the oven).
