500 g potato

125 g flour

75 g butter

100 g of water

4 eggs

Salt

Frying oil




Preparation

Cooking time: 40 min

Cook the potatoes in boiling salted water for about 30 minutes (depending on size).
During this time, prepare the choux pastry: bring 10 cl of water to the boil with the butter.
Salt and pour in the flour all at once, stir vigorously with a wooden spoon until the dough comes away from the birds in the pan.
Let cool and then add the eggs one by one, stirring well each time.
Drain and peel the potatoes, mash them into a fine purée and add them to the choux pastry. Season with salt and pepper and leave to cool.
Then form small walnut-sized balls with your floured hands, or use a piping bag.
Throw them into the hot frying oil in small quantities and leave to brown for about 1 min.
