500 g pineapple slices, tinned

4 eggs

250 g caster sugar

150 g butter

250 g flour

3 cl rum

1 lemon

1 sachet of yeast




Preparation

Cooking time: 45 min

Drain the pineapple slices and keep the syrup. Prepare the caramel.
Pour it into a baking tin, cover the bottom of the tin well. Preheat the oven to 180°C.
Place pineapple slices on the caramel to cover the bottom of the pan. Blend the rest of the slices in a blender.
Whisk the eggs with the sugar into a frothy mixture, add the softened butter cut into pieces, flour, half the rum, lemon juice, yeast and pineapple puree.
Mix well and pour into the mould.
Bake for 45 to 50 minutes. Let cool a little before unmoulding and sprinkle the cake with the remaining rum and pineapple syrup.
