400 g flour

15 g potato starch

8 g sugar

8 g salt

20 g fresh baker's yeast or a diluted dry yeast tablet

about 25 cl of water

In the food processor bowl, add the flour, cornstarch, sugar and salt one by one.
Then place the bowl under the kneading attachment. Beat on speed 3.
Add the yeast. Knead
Gradually add water and olive oil. Knead again.
Once you have added all the water, judge whether it is necessary to add more flour if the dough is too sticky.
Flour a bowl under and over the dough. Wrap the bowl with a cloth and leave the dough to rest for at least 2 to 3 hours. Half a day is better.
Oil the baking sheet on which you want to place your pizza. All that's left to do is spread the dough, garnish it and, of course, bake it!!!
