1 pizza dough
2 onions
1 eggplant
1 small jar of tomato coulis
1 scoop of mozzarella
Black olives
Preparation

Cooking time: 15 min
Cut the aubergines into thin slices (with or without the skin).
Fry the aubergines over medium heat in olive oil until they are really melting and coloured.
Set them aside between paper towels.
Melt the onions in the eggplant cooking oil until they are slightly coloured.
Roll out the pizza dough.
Cover it with tomato coulis to about 2 cm from the edge.
Arrange the onions, then the aubergines, and cover with thin slices of mozzarella cheese. Arrange black olives on top for decoration.
Bake in a HOT oven (240°C - Th 8) until crispy!
