2 kg of chicory

12 slices of ham

45 g butter

45 g flour

75 g cream

30 cl milk

60 g grated Gruyere cheese

Pepper

Salt

Cooking time: 1 h

Cook the endives in boiling water for 45 min, then drain them well.
Arrange the cooked endives on the slices of ham and roll them up.
Place the endives surrounded by ham in an ovenproof dish.
Make a Mornay sauce by mixing the butter, flour, milk and cheese. Season with salt and pepper.
Pour the sauce over the ham endives and cover with grated cheese.
Gratinate for 10 to 15 minutes in the oven at 200°C (gas mark 6-7).
