2 pork tenderloins

1 jar of old-fashioned mustard Mesh

50 g butter

4 spoons of olive oil

2 kg of potatoes (Princess Amandine or Primeur)

2 branches of laurel

2 sprigs of thyme

Guerande's salt

Pepper flavour

In a large ovenproof dish, put the butter cut into pieces, place the thyme and bay leaf sprigs.
Spread the filets mignons with mustard (on all sides), place them in the dish on the sprigs of thyme and bay leaf.
Season with salt and pepper and place in the preheated oven at 210°C for 45 minutes (return halfway through cooking).
In the meantime, peel the potatoes (cut them if they are large).
Steam the potatoes.
Take the dish out of the oven, turn the filets mignons over, add 1 large glass of water to dilute the sauce, put the potatoes around the filets mignons. Put them back in the oven for about 30 minutes.
