1 cooked beetroot
200 g lamb's lettuce
2 g butter, half salt
Fleur de sel
Pepper 5 berries

Cooking time: 5 min
Arrange the lamb's lettuce on four plates.
Slice the beetroot in four, then pan-fry it with 15 g of butter, 2-3 min on each side.
Arrange it on the lamb's lettuce, seasoned with balsamic vinegar.
Then cook the scallops with 15 g butter, 1-2 min on each side, drain, and arrange them around the beetroot.
Add a few pinches of fleur de sel to the warm beetroot, and serve.
