1 apple (a little sour)

100 g of comté cheese (or gruyère, beaufort...)

1 red beetroot

2 eggs

Wash and remove the leaves from the endives and cut them into small pieces.
Cook the soft-boiled eggs (the yolk must remain liquid).
Prepare the sauce in your salad bowl: salt + pepper + mustard.
Add the Roquefort cream and mix, then the two vinegars (half and half) and the oil.
Mix well and add the two eggs cut into pieces.
Mix well again.
Put the endives cut into pieces in the salting pan. Add the apple, the comté cheese and the beetroot cut in dices.
Stir your salad and serve.
