200 g flour

200 g sugar

4 eggs

1/2 packet of baking powder

100 g butter

1 grated lemon (untreated)
For the syrup:

20 sugar cubes n°4

Preparation

Cooking time: 35 min

Separate the whites from the yolks.
Beat the egg whites until stiff and set aside.
In a double boiler, melt the butter.
Grate the lemon.
Work the yolks with the sugar.
Add the grated lemon, flour, baking powder and melted butter. Gently fold in the egg whites.
Bake at 180°C (gas mark 6) for 30 to 40 minutes.
In the meantime, make the syrup over low heat with the 20 sugar cubes and the juice of the 2 lemons; soak the cake with this syrup.
Serve cold with custard, strawberries, raspberries, etc. And even plain!
