Ingredients

50 cl milk
4 eggs
150 g caster sugar
1 sachet of vanilla sugar
1 tablespoon of water
125 g butter
110 g flour
1 pinch of salt
Preparation

Cooking time: 50 min
The quantities are for a 24 cm diameter mould.
Use a silicone mould or a mould covered with baking paper.
Preheat the oven to 150°C.
Separate the egg whites from the yolks.
Mix the yolks with the caster sugar, vanilla sugar and water until white.
Stir in the melted butter.
Add flour and salt.
Once well mixed, gradually add the milk while whisking.
Whisk the egg whites until stiff.
Gently add it to the previous mixture. Be careful not to incorporate the whites perfectly, it must remain full of small pieces of whites.
Pour the preparation into the mould, smoothing the top. Put in the oven for 50 minutes at 150°C.
The preparation is liquid, it looks like "pancake batter with lumps".
When it comes out of the oven the cake shakes but it is golden. You have to wait until it cools down for it to "freeze".
Let it rest in the mould at room temperature until it has cooled sufficiently to put it in the fridge.
Wait 1 to 2 hours before eating it.
Unmould and enjoy.
The magic happens at the moment of cooking. If it doesn't work, you have to adapt the cooking time according to the oven.
