400 g medium durum wheat semolina

100 g butter

500 g date paste (oriental department in supermarkets)

5 teaspoons orange blossom water

1 pinch of cinnamon

1 pinch of salt

1 jar of honey

1 glass of water

1 frying oil (optional)




Preparation

Preparation time: 15 min
Cooking time: 40 min
Prepare a first dough with the semolina, butter, salt, a glass of water and 4 teaspoons of orange blossom water.
Mix everything together and roll the dough into a long sausage.
Prepare a second dough with the date dough, the cinnamon and the last spoonful of orange blossom water, put it in the microwave for a few seconds to make it more malleable. Mix and make a second sausage.
Dig a trench in the first paste and insert the second one, then roll it up to close it evenly. Cut the sausage into diamond shapes.
Cooking: cook in the oven for 5 minutes at 250°C then 15 minutes at 150°C.
They always come out white so I spend a few seconds in a frying bath.
Just after cooking, heat a bowl of honey in the microwave for 1 minute and dip each diamond in it on both sides, then place them on a rack to drain off the excess honey.
Leave to cool on a plate, separating them well, then CHILL!
