Olive oil

1 onion

1 clove of garlic

1 sugar cube

1 small tin of pitted black olives

1 bottle of tomato purée

Fresh or dried herbs, oregano, basil, parsley etc.



spices (Tabasco, chilli according to taste)

Cooking time: 30 min
Finely chop (or blend) the garlic and onion. Also chop the olives. Heat some olive oil in a stewpot, or a large saucepan and put the garlic and onion in it and fry them with half a piece of sugar.
Once all this has melted, add the olives and let it fry again.
Finally add the tomato and all the spices, in good quantity (the best is to judge by taste). Put on a very low heat, cover and simmer for at least 1/2 hour, stirring occasionally.
Pour over 'al dente' pasta or let the sauce cool before topping a pizza dough and adding whatever you like.
