2 fresh puff pastry sheets (about 400 g)

125 g almond powder

125 g icing sugar

100 g soft butter

2 eggs

2 tablespoons of rum

1 teaspoon bitter almond flavouring

Cooking time: 30 min
To give an incomparable flavour to the almond powder, make it blond on low heat. Put in a bowl and leave to cool. Add the sugar.
Work the butter in a bowl with a spatula until it is soft, then add the previous mixture. Add the eggs, rum and bitter almond extract. Mix.
Spread the prepared frangipane over the first disc and cover it with the second disc. Baste the top with egg yolk, then square it with a knife.
Bake the cake in a preheated oven Th 6 (180°C).
