200 g cooked beetroot

1 egg white

1 dehydrated garlic

1 tablespoon walnut vinegar

Pepper from the mill


5 shrimp tails for decoration

Total Time: 15 min
Preparation time: 15 min
Turn the white into firm snow.
Mix the beets with the vinegar, garlic, salt and pepper.
Gently add the egg white to the preparation and pour into small glasses.
Place in the fridge for at least 2 hours (longer is better).
Just before serving, place a shrimp tail in each glass.
