Number of persons

200 g bacon

1/2 cooked beetroot

Stale bread or ready-made croutons

1/2 sliced green onion

12 cherry tomatoes

1/3 red pepper

2 eggs

50 g bean sprouts

12 sliced iceberg lettuce leaves
For the dressing:

3 tablespoons of oil

1 tablespoon vinegar

Preparation time: 15 min
Cooking time: 10 min
Harden the eggs by immersing them for 10 minutes in boiling water, then peel and slice them.
Fry the bacon and halfway through cooking, add the soya sprouts.
Cut the cherry tomatoes in half, as well as the beetroot and diced pepper.
If you opt for home-made croutons, pan-fry stale bread cubes in butter.
In a large salad bowl mix all the ingredients.
Serve chilled and season to your liking, I made a simple vinaigrette with olive oil, balsamic vinegar and old fashioned mustard, it went very well.
