4 l of mussels

30 g butter or margarine

2 shallots

15 cl dry white wine

1 level teaspoon of flour

Cooking time: 15 min

Chop the shallots.
Scrape well and wash the mussels.
Put them in a casserole with 1 knob of butter, the chopped shallots and the white wine.
Open them in the covered casserole on high heat for a few minutes. Mix 2 or 3 times during cooking.
As soon as they are open, remove the mussels from the casserole, preserving the cooking juices. Place them in 1 deep dish and keep them warm.
Return the juice to the heat. Knead with 1 fork 1 teaspoon of flour with the same amount of butter or margarine. Add it to the juices from cooking the mussels on the heat. Let it boil for a moment. Add salt and pepper.
Pour over the mussels. Sprinkle with chopped parsley and serve.
