For the beef broth:

400 g of beef scoter

1 marrow bone

1 onion

2 carrots

2 peeled tomatoes in juice

1 bouquet garni

For the soup:

400 g beetroot

1 turnip

1 potato

2 peeled tomatoes in juice

1 leek white

2 cloves of garlic

1/2 teaspoon sugar

4 tablespoons heavy cream

2 tablespoons vinegar

1 tablespoon lemon juice

30 g butter

Cooking time: 3 hours
Prepare your beef stock: peel the carrots and onion, then cut them into pieces. Also cut the peeled tomatoes and the beef into medium-sized pieces.
Pour the mixture into the Thermomix tank, add salt and pepper and 2 litres of cold water. Bring to the boil and simmer for a long time for 90 minutes / 95 °C / spoonful speed / reverse direction. Separate the beef from the stock in two pitchers. There is no need to rinse the tank.
Prepare the soup: peel the beets, turnip and potato. Cut them into pieces, as well as the leek white and the peeled tomatoes.
Put the butter in the tank of your Thermomix. Add the pieces of beetroot, turnip and tomato. Peel and press the garlic onto the preparation. Pour in the vinegar, sugar and enough stock to cover. Simmer for 60 min / 95 °C / spoonful speed / reverse direction.
Finally add the pieces of meat and the potato. Add salt and pepper if necessary. Finish cooking for 30 min / 90 °C / live. spoon / reverse.
Serve hot with a spoonful of cream mixed with lemon juice.
