Number of large pizzas

1 kg of ripe tomatoes (about 9 medium to small)

3 cloves of garlic

1 medium onion

3 small sprigs of thyme

2 bay leaves

1 tablespoon oregano

3 tablespoons of vegetable oil (or olive oil)

1 teaspoon tomato paste

1 sugar cube

Peel the tomatoes (after plunging them into boiling water and making a cross-shaped incision in the top), cut them in half lengthwise and remove the seeds.
Coarsely chop the flesh with a knife.
Crush the garlic cloves, mince the onion and add them to the tomatoes and put them on a medium to low heat.
Add salt, pepper and sugar + tomato concentrate, bay leaf, thyme and oregano and oil.
Leave to cook for 10 minutes.
Remove the bay leaf and thyme and the excess oregano (leave a little).
