1 shortcrust pastry

3 red, white and yellow beets

1 zucchini and 2 carrots

3 eggs

20 cl fresh cream

300 g ewe's cheese (Corsica)

25 cl frying oil

1/2 bunch of chives

Pepper

Cooking time: 20 min
Preheat the oven to 200°C (thermostat 6/7).
Prepare the shortcrust pastry and pre-cook it with beans for 6 minutes.
Prepare the binder with the eggs, fresh cream, salt, pepper and chives.
Cut the vegetables into "multicoloured" wafers and fry them into "chips" in a hot oil bath for 4 minutes.
Spread the crispy vegetables on the tart dough and dry them for 3 minutes in the oven at 180°C (gas mark 6).
Then pour in the binder and bake for 15 minutes at 200°C (gas mark 6/7).
Cut the goat's cheese into slices and arrange them on the tart: finish baking in the oven for 5 minutes.
